  1. Season chicken thighs with salt and pepper.
  2. Heat 1 tbsp oil in a large pot; brown chicken 2–3 minutes; set aside.
  3. Add remaining oil, sauté garlic, onion, carrots, celery until tender; stir in thyme.
  4. Whisk in chicken stock, bay leaves and 1 cup water; bring to a boil.
  5. Stir in orzo, rosemary and chicken; simmer until orzo is tender, ~10–12 minutes.
  6. Stir in lemon juice and parsley; adjust seasoning.
  7. Serve immediately.
